Easy Healthy Recipe: Gena’s Delicious Lentil Salad Recipe…
This recipe was given to me by my dear friend Gena! It’s so delicious that when she made it for me the first time I asked her to send me the recipe so we could share the love!
Just to be real, I want you to know that I grew up with lentils in my family, and I NEVER liked them. My grandmother used to make them all the time, and I just always thought they were yucky. So, I was really surprised when Gena made this and I actually liked it. It’s the delicious combo of the lentils with the tomatoes, cilantro and onions. The flavors just all pop!.
It’s such an easy recipe to make, and it’s super healthy and definitely in the clean eating plan. Also, lentils are LOADED with fiber and nutrition. Get this, one cup of lentils has 16 grams of fiber, 18 grams of protein and only 230 calories. That is really a nutrition powerhouse. To put this in perspective, you would have to eat about 2.5 cups of broccoli to get an equal amount of fiber!
If you don’t have a Trader Joe’s by you (sad) then you can either make your own lentils or find another type of prepared package lentils that you can find.

GENA’S LENTIL SALAD
- 1 Package of lentils from Trader Joes – in refrigerator section
- ½ orange bell pepper
- ½ yellow bell pepper
- 2 large tomatoes
- ½ cup cilantro
- 4 green onions
- ½ cup Italian dressing (I make mine ¼ cup of balsamic vinegar, ¼ cup of flax oil, tablespoon of hot mustard, salt and pepper to taste)
Chop all veggies real fine. Mix with lentils and Italian dressing. Add salt and pepper to taste!
